The best Wiener Schnitzel in Cologne. We did, after all, get a dachshund for it.

The kitchen

The best Wiener Schnitzel in Cologne.
We finally got a dachshund for that.

What we stand for

It all started with the schnitzel. From the loin of veal, beaten, breaded, fried in clarified butter, as big as it has to be. No compromise, no shortcut, no show. A house that gets a dachshund cannot afford a bad day when it comes to the schnitzel.

The schnitzel remains the focal point. Around it, an entire cuisine has developed. Classics from Southern Germany and Austria, skilfully prepared, without feeling like a museum piece. A Kaiserschmarrn that is brought to the table in the pan.

Beside it a second handwriting. Lighter, more precise, closer to the river. Marinated salmon from the Faroes. And whatever the market yields in the morning.

Once a day, something is created that is not on any map. Ask for the evening's recommendations. They depend on what arrived in the morning and therefore cannot be planned in advance.

Grain once flowed through this house.
Someone has to be responsible for what goes through today.

The head chef at JOSEPH'S is Sebastian Ostlender.
Sebastian Ostlender

He has been the head chef of this establishment for many years. He stands in the kitchen next to the illuminated sign, and sends nothing out that he would not eat himself. When the restaurant gets busy and everything has to be ready at once, he becomes calm. That is precisely when the kitchen runs best. He delivers when the pressure is highest, and every single day he sets the standard by which the next plate must be judged.

„You shouldn't take food too seriously. It should make you happy, it should taste good and it should bring people together.“
SEBASTIAN OSTLENDER

Ask him about the vegetarian menu that is not on the card. Ask about the vegan dessert. Ask at all. In this kitchen, requests are not met with a shrug, but with an idea.

Allergies and intolerances

Let us know when you make your reservation, gladly by email as well. Then it will be prepared before you arrive, and you won't have to make a fuss about it at the table.
